This was a tough
one for me since I have
lots of favorite recipes.

Parmesan Chicken Breasts
1.5 lbs boneless chicken breasts
1/2 cup of fresh grated Parmesan cheese
1 stick of butter, melted
1 1/4 cups of bread crumbs, plain
Salt and pepper to taste
Separate the chicken breasts and
flatten each slightly with a meat tenderizer.
Put melted butter in a large bowl.
In another large bowl, mix cheese,
bread crumbs and
salt and pepper to taste.
Take each chicken breast and drench it
in the melted butter, and then coat
with the bread crumb/cheese mixture.
Place each piece in a
buttered casserole dish
& bake at 350 degrees
for 25-30 minutes
or until golden brown.
(Kids especially love this dish.
This is my go-to recipe when making
dinner for a friend's family.)
Orzo Greek Summer Salad
10 ox. box of orzo pasta
1/3 c. oil-packed sun-dried tomatoes,
drained and chopped
5 Tbsp. extra-virgin olive oil
1/4 c. balsamic vinegar
1/4 c. chopped Kalamata olives
1 c. finely chopped radicchio
1/2 c. pine nuts, toasted
1/2 c. chopped fresh basil
1/2 c. freshly grated parmesan cheese
2 lg. cloves of garlic, minced
1/2 c. crumbled feta cheese
10 ox. box of orzo pasta
1/3 c. oil-packed sun-dried tomatoes,
drained and chopped
5 Tbsp. extra-virgin olive oil

drain well and transfer to large bowl.
Add tomatoes, oil, vinegar and olives.
Toss to blend. Let stand until cool.
Mix chopped radicchio, buts, basil,
cheese and garlic into orzo mixture.
Season with salt and pepper to taste.
Serve at room temperature.
Serves 6
Edamame Hummus

1/2 tsp. ground coriander
2 peeled garlic cloves
1/2 c. fresh parsley
2-3 Tbsp. tahini paste
3-4 Tbsp. water
4 Tbsp. fresh lemon juice
1-2 dashes of Tobasco sauce
1/2 tsp. paprika, optional
Fresh pita chip or vegetables for dipping
Place oil, salt, garlic, coriander, and
cumin in a food processor and pulse
to combine. Add edamame, parsley,
tahini, water, lemon juice and process
until smooth. Spoon into a bowl
and refrigerate to allow flavors to
blend for a few hours. Dust with paprika
and serve with pitas or fresh vegetables.

Oh yum! I must try that Greek orzo salad, have had something similiar and loved it, make those chicken breasts, a favorite of my kids. Thanks for sharing!
